The Return of Bison
First in town to ever present this U.S. national treasure exclusively six years ago, Grand Hyatt Steakhouse is proud to announce the return of the great American Bison starting from 1 July, just in time for your Fourth of July celebration.
An ancient ancestor of the modern day cow, bison is also known as America’s official mammal with a remarkable comeback story in numbers since the 1800s. Not only does the animal symbolises the great country spiritually, it is also an excellent source of complete protein, and a healthier beef alternative thanks to its low content of saturated fat and cholesterol. In terms of texture, grain-fed bison meat is leaner and more tender than beef, due in part to the meat’s lack of hormones, antibiotics and steroids.
To celebrate the return of bison meat once again, Chef Marc Benkoe, Head Chef of Grand Hyatt Steakhouse, has created a few dishes that are complimented beautifully by American wines. Highlights include:
Bison Tenderloin Au Poivre
This perfectly seasoned bison tenderloin is coated with a trio of charred green, pink and black peppercorn, and served tableside with a theatrical bourbon flambé for the perfect Instagrammable moment. The lean bison meat is smoothened by the melted garlic butter, giving the tender au poivre a soft, buttery touch.
Bone in Bison Rib Eye
The bone in rib eye is first marinated and spiced with a Texas-style rub, then cold smoked to give the meat a distinctive smoky flavour before hitting the charcoal grill. The powerful spice rub gives the bison meat an exceptional kick, while the smoky aroma adds depth to the meat’s natural gamey taste for a mouthful of unique, intriguing flavours.
Pair the bison dishes from the Great American Plains with four distinctive wines from the U.S. wine regions, with a dedicated wine list specially curated by Steakhouse’s resident sommelier. Guests ordering any bison dishes can also enjoy special prices on a collection of exquisite American wines.
